i would keep the epad as small as possible, and route it so it surrounds the thermistor. its unclear from the datasheet if the epad is floating, or if it is connected to substrated. the safest bet is to keep it disconnected, but you would get good thermal conduction if you could connect it to the thermistor pads some way. but, if it doesnt have high isolation, this would be a problem. ultimately, you want to keep the heat from spreading anywhere other than the thermistor. as heat spreads, the temperature drops (Q=k*dT), so you will get a larger differential between thermistor and matched pair if the pad can dissipate. so no vias, no bottom plane, just route it around the thermistor. if you cap this area off with a bit of insulation, it will help hold that heat in as well. also, if you can do one thermistor on each side, you will get better coupling.
